What seasoning do you use when cooking fried Calamari? -Jenny G.

I use sea salt (if available) or Kosher salt and fresh cracked black pepper for simply breaded, fried Calamari.  Make sure oil is at 375 degrees and be sure not to overcook as it will turn "rubbery" quickly. However, there are so many more fun, though slightly more complex, ways to prepare Calamari such as grilled whole or marinated (citrus cooked), stuffed, sesame or nut-crusted, used as an entree, appetizer or salad.
