Crab Bisque

• 1 onion (finely chopped)                                                                    

• 1 gallon of whole milk

• 3 stalks of celery (finely chopped)                                 

• ½ gallon of heavy whipping cream

• 1 green pepper (finely chopped)                                             

• chopped parsley

• 1 lb. of margarine                                                                                           

• salt

• 2 C flour                                                                                                                

• white pepper

• 2 C jumbo lump crabmeat                                                                

• 2 T chicken base

Add onions, celery, and green pepper to melted margarine and heat slowly while adding flour to make a rue. Stir in milk, heavy whipping cream and chicken base over medium heat. Continue to cook over medium heat to proper consistency. Add parsley, salt & white pepper to taste.
