Sauce
6 tablespoons butter or margarine
1 tablespoon cooking oil
1 medium size onion -- chopped
3 garlic cloves -- minced
1 can tomato sauce -- (8 ounce)
water
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
Sugar to taste
1 tablespoon each: Worcestershire sauce and vinegar
(1 to 2) Hot red pepper sauce to taste
2 tablespoons chili powder
1 teaspoon dry mustard powder
Procedure: Heat butter and oil in a large skillet over
medium heat. Add onions and garlic and sauté until soft. Stir in tomato
sauce and sauté a few minutes more. Stir in 2 cups water, salt, pepper,
sugar, Worcestershire, vinegar and hot sauce. In a small bowl, mix chili
powder, mustard and 1/4 cup cold water; pour mixture into the skillet.
Add more water, if needed, to make 1 quart of mixture. Check seasonings
and simmer,
uncovered, at least 30 minutes.
