Easy Cornbread

1¼ cups all-purpose flour
¾ cup corn meal
¼ cup sugar
2 tsp baking powder
½ tsp salt (optional)
1 cup skim milk
½ cup vegetable oil
2 egg whites or 1 egg, beaten

Procedure: Heat oven to 400ºF. Grease 8 or 9 inch baking pan. Combine dry ingredients. Stir in milk, oil and egg, mixing just until moistened. Pour into prepared pan. Bake
20-25 minutes or until light brown and wooden pick inserted near center comes out clean. Serve warm!

Microwave Instructions: Combine dry ingredients. Stir in milk, oil and egg, mixing just until dry ingredients are moistened. Pour batter into ungreased 9 inch glass pie plate or microwavable cake pan. Microwave at high 5 to 6 minutes or until surface feels dry, rotating pan after 2 minutes. Let stand 5 minutes before serving.

Makes 9 servings
