Zucchini
Bread
3 eggs, well beaten
2 cups sugar
1 cup oil
2 cups squash or zucchini, grated
3 cups flour
1 tsp cinnamon
½ tsp baking powder
1 tsp salt
¾ cup raisins or dates
¾ cup nuts
½ tsp nutmeg
1½ tsp baking soda
1½ tsp vanilla
Procedure: Mix together.
Bake at 325° for 55 minutes to 1 hour. Makes 2 loaves in greased pans.
