Pie

A light, cream cheese pie, fast and easy to
make
2 8oz. bars of cream cheese at room temp
1 t. vanilla
1-1/2 c. powdered sugar
1 1/2 pt. very cold heavy whipping cream.
1/2 lb. or so fresh berries (strawberries, blueberries, etc., 1 or mix; in
winter canned berries can be used, drain well)
1 large gram cracker pie crust.
Mix cream cheese and vanilla until smooth. Add sugar
and mix well. Then add whipping cream and whip on high until stiff. Fold
in berries and put in pie pan. Pies can be made in about 15 min.
This is a fast easy light dish that most love and can
be tossed together at the last minute.
