Blue
Cheese Dressing
8 oz sliced bacon
12 ea green onion
8 clove peeled garlic
1½ qt mayonnaise
1½ qt sour cream
½ cup cider vinegar
2 cup milk
12 oz blue cheese crumbles, or suitable substitute
1 tbl freshly ground black pepper
Procedure: Lay the bacon out on
the sheet pan and bake until very crisp. Drain the fat and reserve. When
the bacon has cooled, chop it with the green onion and the garlic. Put
these in a mixing bowl and stir in the mayonnaise and the sour cream.
Next stir in the reserved bacon fat, vinegar, and the milk. Lastly stir
in the blue cheese and the pepper. The addition of bacon and blue cheese
offers sufficient amounts of salt for the recipe.
