Red
Wine Vinaigrette
1 ea red onion
6 clove peeled garlic
4 tbsp Italian herbs
½ cup Dijon mustard
2 cup red wine vinegar
1 cup red wine
3 qt olive oil
1 tbsp freshly ground black pepper
1 cup chopped parsley
to taste salt
Procedure: Mince the
onion and the garlic and combine in the bowl of the mixer with the
herbs, mustard. vinegar, and the wine. With the machine running, slowly
add the oil in a thin stream. As the dressing begins to emulsify,
continue to add the oil until it has all been incorporated into the
dressing. Add the pepper, parsley, and the salt to taste.
