Smoked
Sausage Jambalaya
Yield: Serves 6
Smoked Sausage, cut into ½ inch slices 1
lb
Ground Beef 1 lb
Green Pepper, chopped 1 medium
Green Onions, chopped ½ C
Garlic, minced 5 cloves
Tomatoes, undrained 1-28 Oz. Can
Salt ½ Tsp.
Pepper ¼ Tsp.
Long grain rice, uncooked 1 C
Water 1- ½ C
Procedure: Cook sausage
in Dutch oven until browned: remove sausage. Add ground beef, green
pepper, green onions and garlic to Dutch oven; cook until beef is
browned. Drained. Add tomatoes, salt, pepper, and sausage. Cover and
simmer for about 10 minutes.
Add rice and water to meat mixture; bring
to a boil, then turn the heat down to simmer; cover and cook 25 minutes
or until rice is tender. You can brown the rice in a little canola oil
before adding. It seems to give it more of that "Cajun" taste.
