Potato
Salad
1 lb new potatoes
4 spring onions, finely sliced
6 tbsp mayonnaise
salt & black pepper
3 sprigs of mint
Clean, scrub or scrape the potatoes.
Place in a pan of salted cold water with 3 mint sprigs. Bring to the
boil over a moderate heat and boil for 10 min or until tender when
pierced.
Drain the potatoes and slice while still
hot. Add the spring onions and mayonnaise to the potatoes in a bowl.
Season to taste and leave to cool. Serve with a salad and cold meats.
