Crab
Enchiladas
Fresh cooked crab
meat 3/4 lb.
Onion, chopped 1/2 medium.
Garlic 1 t. spoon
Sour cream 16 oz.
Seafood soup 1cup
Cheddar cheese, grated 2cup.
Tortillas 8 medium
Black olives, sliced 16 pcs.
Sauté onion, garlic until soft. Add crab meat and continue to sauté
for 2 minutes; set aside. In a sauce pan, mix sour cream, soup and 1 cup
of cheese, then remove 3/4 cup of mixture and set aside. Mix remaining
mixture with crab meat. Spray 11 3/4" x7 1/2"x1 3/4"
glass baking dish with cooking spray. Fill each tortilla with 1/4 to 1/2
cup filling and roll. Place in pan, seam side down, spread reserved 3/4
cup sour cream mixture over tortillas, and make sure that covering all
of them. Sprinkle with 1 cup remaining cheese and top with olives. Bake
at 350 degree for 35 to 40 minutes.
