Crab Salad in Vinaigrette
8 oz mixed prepared
crab meat
2 large or 4 small gherkins, finely chopped
1 tbsps capers, chopped
1 tbsp finely chopped fresh coriander leaves
Freshly grated zest of 1 lime
2 tbsps fresh lime juice
1 shallot, finely chopped
1 tbsp white wine
1 tbsp light olive oil
Few drops of Tabasco
Salt & pepper
Combine all the
ingredients in a bowl then divide into 2. Garnish with some crisp salad
leaves or watercress all round. Serve with buttered brown bread.
