Salmon
Pie
2 Pillsbury All Ready Pie Crusts (or 2
home made)
2 medium onions - chopped fine
1 garlic clove - minced
1/4 cup melted butter - divided
1/2 cup fresh bread crumbs
1/3 cup parmesan cheese
1 14 oz. can of salmon - drained and flaked
3 hard boiled eggs - sliced
1/3 cup finely chopped fresh dill or about 1 tsp. dried dill
1 cup sour cream
1 egg - beaten
Procedure: Sauté onion
and garlic in 2 tbsp. butter until tender - set aside. Combine bread
crumbs and parmesan cheese - set aside. Place pastry in pie shell.
Layer in shell:
Half the crumb mixture
Half the onion mixture
All the salmon
All the egg slices
Dill
Remaining onion mixture
Remaining crumb mixture
Drizzle with remaining 2 tbsp. butter.
Spread sour cream over all. Top with remaining pastry - crimp edges
well. Brush top of pie with beaten egg - cut slits in top crust. Bake at
375° for about 1 hour - let stand 10 minutes before cutting.
