Corn Chowder
12½ pts chicken
stock
1 Bay leaf
1 medium onion, peeled & chopped
¾ lb potatoes, peeled and in 1" dice
1 carrot peeled and in 1cm dice
½ tsp dried thyme
3½ cups corn
4 fl oz single cream
Procedure:
In a large pot combine broth, bay leaf, onion, potatoes, carrot and
thyme. Bring to the boil, cover, reduce heat and simmer for 25 minutes.
Remove the bay leaf. Put the corn and one and a half cups of the soup
into a liquidizer and blend briefly. Return liquid to the soup Add the
cream and bring to a simmer. Cook gently for five minutes and then
season and serve.
